Yummy Mexican Quinoa Recipe

Hi there!! Today I'm going to share with you a recipe I found on Tasty by Buzzfeed! It's this one-pot Mexican quinoa, and it's so good!!


Here are the ingredients for the quinoa:


1 cup of quinoa (I used red quinoa)

1 1/2 cups of water or vegetable broth (I used veggie broth)

1 1/4 cups of salsa

1 tablespoon of cumin

1 can of black beans, drained (15 oz)

1 cup of frozen corn, defrosted

A pinch of salt

1 teaspoon of olive oil


Here are the ingredients for the avocado dressing:


1 avocado, mashed

1 clove of garlic, minced

2 teaspoons of lemon juice

3 tablespoons of olive oil

A pinch of salt

A pinch of pepper

4 tablespoons of water


Here are the instructions:


  1. In a medium pot, combine quinoa and water, and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 10 minutes.

  2. Add in the salsa, cumin, and cover for 5 more minutes until the quinoa is fluffy.

  3. Add in the black beans, corn, salt, and olive oil, and stir until combined.

  4. For the avocado dressing, combine mashed avocado, garlic, lemon juice, olive oil, salt, and pepper in a small bowl (or liquid measuring cup) and whisk until smooth.

  5. Whisk in the water a little bit at a time until desired consistency is reached. For an extra smooth consistency, process all ingredients in blender or food processor

  6. Put everything into a bowl and enjoy!

I also topped mine off with some vegan sour cream and vegan ranch sauce!
